Raisin the Roof Eggnog French Toast Casserole

  • Serves 6

INGREDIENTS

  • 2 cups whole milk or eggnog

  • 8 eggs

  • 2 tbsp. brown sugar

  • 2 tsp. vanilla extract

  • 1 tsp. cinnamon

  • ¼ tsp. nutmeg

  • 1 cup raisins

  • 1 loaf Dave’s Killer Bread Raisin the Roof Breakfast Bread, torn into large bite size pieces

  • 4 Tbsp. powdered sugar, to serve

  • ¼ cup maple syrup, to serve

Directions:

  1. Preheat oven to 350 degrees Fahrenheit and spray an 8x10 baking dish with cooking spray or grease with coconut oil

  2. To a large bowl add milk or eggnog, eggs, brown sugar, vanilla extract, cinnamon, nutmeg and raisins. Whisk well to combine

  3. Add torn pieces of bread and stir to coat

  4. Pour bread mixture into greased baking dish

  5. Bake casserole 40-45 minutes or until top is golden and edges are slightly browned

  6. Serve casserole with a sprinkle of powdered sugar and drizzle of maple syrup

  7. Enjoy immediately!
