Epic-ly Easy Being Green Breakfast Sando
Makes 1 serving
INGREDIENTS
2 slices Dave’s Killer Bread Epic Everything Breakfast Bread, toasted
1/4 cup shredded sharp white cheddar cheese
1 egg, seasoned with salt and pepper
1 tsp. olive oil
1/2 cup green onion, sliced
1 avocado, sliced
Directions:
Add oil to a small non-stick skillet over medium heat. Allow to heat for 2-3 minutes before adding green onion. Using a rubber spatula, sauté green onions until lightly browned, about 2-3 minutes.
Crack egg into pan over green onions, and tilt pan so all of the green onions are covered. Cook until egg is mostly cooked, about 2-3 minutes, and then flip.
Add cheese on top of the egg and allow it to melt, about 2-3 minutes. Fold egg in half and then in half again, encasing the melted cheese inside.
Assemble sando: top toasted bread with sliced avocado and mush into the bread. Then add the cheesy, oniony egg, and top with remaining slice of toasted bread. Enjoy!
