INGReDIENTS:

  • 2 tablespoons vegetable oil, divided

  • 2 medium yellow onions

For sauce

  • ¼ cup vegan mayo

  • 2 tablespoons ketchup

  • 1 tablespoon sweet pickle relish

  • ½ teaspoon vinegar

For burgers

  • ¼ cup yellow mustard, divided

  • 2 lbs. ground vegan meat alternative

  • 4 Dave’s Burger Buns Done Right

  • Iceberg lettuce torn to bun size

  • Sliced tomato

  •  Salt and pepper

  •  8 slices vegan cheese

instructions:

Caramelize onions:

  1. Dice onion and add to saute pan with oil. Cook on medium low uncovered for a few minutes, stirring occasionally.

  2. Cover the pan and cook on low for 20 minutes until they are golden and soft, stirring occasionally.

  3. Uncover them once they have started to brown and caramelize and add ½ cup of water. Simmer until the water evaporates. Set onions aside and wipe out the pan.

Toast the buns:

Place 4 split Burger Buns Done Right face side down in an oiled pan and toast insides until golden brown. Set aside.

Make burger patties:

  1. Using clean hands, form eight equal sized patties and season with salt and pepper.

  2. Cook one side in an oiled pan for 2-3 minutes. Smash down slightly and flip.

  3. Add 1 ½ tsp yellow mustard to the top of each patty. Allow to cook for 2-3 additional minutes.

  4. Flip the patty again so it is mustard side down and top with vegan cheese slice. Allow the burger to finish cooking and cheese to melt over patty, about 2 minutes more.

Assembling the burger:

Spread 1 tablespoon of burger sauce on toasted bun bottom. Add lettuce and tomato. Add two burger patties topped with melted cheese. Now pile it high with caramelized onions and finish with your toasted bun top. Serve with fries and plenty of napkins.
