killer pumpkin stuffed french toast

INGREDIENTS:

  • 8 slices Dave’s Killer Bread 100% Whole Wheat Bread 

  • ½ cup pumpkin puree 

  • ¾ cup whole milk 

  • 3 eggs 

  • 1 tsp. pumpkin pie spice 

  • 3 tsp. brown sugar 

  • ½ Tbsp. vanilla extract 

  • 2 Tbsp. butter, plus more to garnish 

  • 4 Tbsp. maple syrup, to garnish 

  • 4 Tbsp. pumpkin seeds, to garnish 

    Cream cheese filling: 

  • 8 oz. cream cheese 

  • 3 Tbsp. maple syrup 

  • 1 tsp. pumpkin pie spice  

instructions:

  1. In a large bowl combine pumpkin puree, milk, eggs, pumpkin pie spice, brown sugar, and vanilla extract. Whisk to combine. 

  2. In a separate medium bowl add cream cheese, maple syrup, and pumpkin pie spice. Use a hand mixer to whip until creamy. 

  3. Lay out 8 slices of bread. Add a heaping tablespoon of cream cheese filling onto the center of four of the slices of bread. Top with remaining slices of bread. 

  4. Preheat a nonstick skillet over medium heat and add butter.  

  5. Dip stuffed bread into pumpkin mixture to fully coat and add to hot skillet. Cook 2-4 minutes per side, or until French toast is golden, and edges are slightly browned. Repeat with remainder of bread and pumpkin mixture.  

  6. Serve stuffed French toast with maple syrup, a pat of butter, and a sprinkle of pumpkin seeds. Enjoy!
