The Quadruple B — Butternut Bacon BrusselS Bites​ 

INGREDIENTS:

  • 1 package Rock N Rolls, sliced in half 

  • 1 butternut squash, peeled and cubed 

  • 1 Tbsp. avocado oil 

  • 1 Tbsp. salted butter 

  • 4 slices bacon, cooked until crispy 

  • 3 cups brussels sprouts, thinly sliced on a mandoline 

Directions:

  1. Preheat oven to 450F.  

  2. Cube butternut squash and add to a parchment paper-lined baking tray. Drizzle with avocado oil and toss to combine. Roast for 25-30 minutes, stirring halfway through, until squash are golden and fork tender. 

  3. While squash roast, use a mandoline to thinly slice brussels sprouts. Add to a parchment paper-lined baking tray and drizzle with avocado oil. Season with sea salt and pepper. Add to oven with squash and cook brussels sprouts for 5-8 minutes, or until lightly crisped.  

  4. Add roasted squash to a bowl and add butter. Mash with a fork until smooth and creamy. 

  5. Half Rock N’ Rolls and place on a baking tray. Toast in a 350F oven for 3-5 minutes, or until lightly toasted.  

  6. Assemble the Quadruple B – add a scoop of mashed butternut squash to toasted bun, top with crispy brussels and bacon. Enjoy!
