MEXICAN STREET CORN BURGERS
Makes 8 Burgers
INgredients
Slider Patties
1 lb ground beef (80/20)
1 tsp chili powder
1 tsp garlic powder
½ tsp cumin
1 tsp kosher salt
½ tsp black pepper
Street Corn Topping:
2 cups corn kernels(fresh, grilled, or frozen and thawed)
¼ cup mayonnaise
¼ cup sour cream
½ cup crumbled cotija cheese
1 tbsp lime juice
½ tsp chill powder
2 tbsp chopped cilantro
Assembly:

1 avocado, thinly sliced
Pickled red onions (optional)
Extra cotija cheese
Lime wedges for serving
Instructions
Make the Street Corn Mixture
In a medium bowl, combine the corn, mayonnaise, sour cream, cotija cheese,lime juice, chili powder, and cilantro.
Mix well and refrigerate until ready to serve.
Prepare the Slider Patties
In a large bowl, combine the ground beef, chili powder, garlic powder, cumin, salt, and pepper.
Form into 8 small slider patties slightly larger than the buns.
Cook the Burgers
Heat a grill or skillet over medium-high heat.
Cook the patties for 3-4 minutes per side, or until they reach your desired doneness.
Toast the Buns
Lightly toast the Dave's Killer Bread Burger Buns Done Right until golden and warm.
Assemble the Sliders
Place a burger patty on each bottom bun.
Top with a generous spoonful of the Mexican street corn mixture.
Add avocado slices and pickled red onions, if using.
Sprinkle with extra cotija cheese and place the topbun on each bun.
