Strawberry Shortbuns
INGREDIENTS:
3 Tbsp. butter, softened at room temperature
3. Tbsp. turbinado sugar
2 cups strawberries, sliced
2 Tbsp. sugar, divided
2 cups heavy cream
Directions:
Add sliced strawberries to a bowl and sprinkle with one tablespoon of sugar to macerate and get all juicy. Stir and let sit for 5 minutes.
Whip heavy cream in a stand mixer or with a hand mixer for 5-8 minutes, or until cream has stiff peaks and is completely whipped and creamy. Add remaining tablespoon of sugar to sweeten. Place whipped cream in refrigerator until ready to serve.
Spread each side of Buns Done Right with room temperature butter and sprinkle with turbinado sugar. Repeat with remainder of buns.
Preheat a non-stick skillet over medium-high heat. Add buns butter side down to hot skillet and toast for 2 minutes.
Remove buns from heat and let cool slightly before building shortcakes.
To buns: add macerated strawberries, whipped cream, and more macerated strawberries on top. Enjoy!
